Seychelles Receipe: Jamalaques Jam

Jamalaques Jam

Main ingredients:
800 gr Jamalaques
500gr Sugar
Vanilla Pod ( half)
Nutmeg to taste

Prepare the Jam:
* Cut the jamalaques into quarters, remove the stones and wash with plenty of water
* Dissolve the sugar in alittle water in a saucepan
* Add the vanilla and bring to the boil
* Add the jamalaques and simmer for 40 to 45 minutes, stirring constantly with a wooden spoon
* Remove from the stove as soon as the consistency is right
* Allow to cool completely
* Put in a jar and set aside
